Think of the BEST meal you ever had. Think about food that gets you excited and hungry at the mention of it's name. Think about food you look forward to. Are you with me so far? Good! Now you know the feeling we are trying to create for our hungry friends out on the street.
We are not looking to skimp on these recipes. We have no interest in how cheaply we can make them. Rather, we are trying to create meals that are equal to or better than any "your Mama" ever made, with the added benefit of being more nutritious than "Mama's".
With the exception of the Square Meal Quiche, most of these recipes were "stolen" from somewhere and then modified to deliver extra protein. As we determine the original authors, we will come back and give them credit for their original recipe.
Square Meal Quiche - by Julia Nelson
Pre-heat oven to 325 degrees
Grate enough cheddar cheese to make 4 cups and set
aside.
Take 1 - 10 oz. package of chopped spinach - thaw &
squeeze the water out. Be sure to break up clumps. and
set aside.
In a large frying pan, thoroughly brown the following:
1 - lb. Jimmy Dean bulk sausage
1 - lb. lean ground beef
Drain grease and set aside
In a large bowl, mix the following ingredients with a whisk or stick blender:
18 - Extra Large Eggs
1 1/2 - cup of milk
1/2 - cups of cream
1/2 - tablespoon Italian seasoning
1/2 - teaspoon salt
2 - dashes red pepper (or to taste)
1 - cup corn meal mix
Next, add and stir in the chopped spinach, the cooked meat and 3 cups
of the grated cheddar cheese.
Spray pan with vegetable oil or PAM spray
Pour mixture into 16" x 12" x 1" Pyrex pan, making sure that
ingredients are evenly distributed in the pan
Spread the remaining 1 cup of grated cheddar cheese over the top of
the mixture.
Place in the middle rack and bake at 325 degrees for 35-40 minutes
When cool, cut into 20 pieces and put into zip bags.
These can be used immediately or refrigerated or frozen for later use.
The Square Meal Cheesy Mac - by Julia Nelson by way of Paula Deen
This recipe began life as a Paula Deen recipe. Julia modified and fortified it to meet our needs. This is a real hit with everyone. You should make this tonight and see what I mean!
This can be cut into squares and put into zip lock bags. This recipe makes about 16 servings
Ingredients:
6 cups cooked elbow macaroni, drained (penne is good too)
6 cups grated Cheddar, 4 cups for the mixture and 2 cups for the top
9 eggs, beaten
1/2 cup sour cream
1 cup cottage cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup milk
Preheat oven to 350 degrees F.
Cook and drain the macaroni.
In a separate bowl, beat the eggs and combine with the remaining ingredients (4 of the 6 cups of cheese).
Add the macaroni and mix. Pour macaroni mixture into a 13X9 casserole dish and bake for 30 to 45 minutes.
Top with additional cheese (remaining 2 cups).

Fortified Brownies
We have increased the protein content of the recipes and in the bargain, the result is simply some of the best brownies I have ever eaten. This helps fulfill one of our goals of serving our friends on the street the BEST food they have ever eaten.
We begin with a very high quality brownie mix. We have had the best success with Ghirardelli Premium Double Chocolate Brownie Mix with Chocolate Chips in the mix. These mixes are available in most grocery stores.
These brownies are SO GOOD I am really tempted to go make some instead of completing this web page! We are talking "seriously good" here.

The BEST Brownies - according to Julia
Julia's brownies are more like traditional brownies than Mike's are and they are WONDERFUL.
Julia's Recipe
For 20 BROWNIES |
FOR 30 EXTRA THICK BROWNIES |
FOR 60 BROWNIES |
1 Pouch Mix |
2 Pouches Mix |
3 Pouches Mix |
11x7-inch OR 9x9-inch pan |
13x9-inch pan |
16x12-inch pan (half sheet pan) |
For each pouch of Brownie Mix you will need:
1/2 - Cup of Water
1/2 - Cup of Canola Oil
1 - Large Eggs
Before you begin:
Preheat standard oven to 325°F (glass or metal pan). Prepare baking pan by lightly
spraying with non-stick cooking spray (like PAM). (Convection oven not recommended.)
Next:
1. BLEND water, canola oil and egg in a medium bowl. Add mix and stir
until moistened (about 40 strokes).
2. SPOON batter into prepared pan and spread evenly.
3. BAKE as directed below.

Do Not Over-bake. Fresh-baked brownies appear under-baked but cool to doneness. Cool completely in pan before cutting. Store in a tightly covered container.
High Altitude: For each pouch, add 1/4 cup all-purpose flour and an additional 2 tablespoons water.
The BEST Brownies - according to Mike
Mike's brownies are more like chocolate cake than brownies, but some of the BEST brownies/chocolate cake you will ever eat!!

Banana Flaxseed Meal Cake
Preheat oven to 350 degrees
Ingredients:
2 - very ripe bananas (about 1 cup)
3/4 - cup buttermilk
1/2 - cup oil, canola, vegetable, etc...
4 - large eggs
1 - package White Cake Mix
1/2 - cup packed light brown sugar
1/4 - cup flaxseed meal
1 - teaspoon ground cinnamon
1 - teaspoon vanilla extract
Vegetable or PAM spray a 13x9 Pyrex baking dish.
Put bananas in mixer bowl, mix on low speed to mash.
Add eggs, buttermilk, and oil, then mix.
Add remaining ingredients, mix on low for a minute, then mix on
medium speed for 2 more minutes.
Pour into Pyrex baking dish.
Place the baking dish on the center of the oven.
Bake until golden brown and a knife or toothpick come out
clean, usually about 35 to 45 minutes.
When cool, cut into 20 pieces and put into zip bags.
These can be used when cool or refrigerated or frozen for later use.
